Mock Banana – Recipe No. 148

This is the legendary and authentic wartime recipe for ‘Mock Banana’.

Before the war the Brits imported 70% of their food which equated to around 20 million tons per year!

Imports dropped significantly to about 1/3rd and consequently many foods such as bananas were impossible to get hold of. Prior to the bar the Brits went crazy for bananas so it was one of the foods that were truly missed.

Somewhere, some strange culinary mind obviously decided that a substitute was needed. This was when the good old parsnip was brought into play…

My lunch today consisted of 4 mock banana sandwiches and actually, despite the rather bizarre experience, they tasted pretty good! (but then again I do love parsnips)

Mock Banana

1 medium parsnip per round of sandwiches
2-3 teaspoon of caster sugar per parsnip
2-3 squirts of banana essence per parsnip (you can buy on eBay)

Method

Peel and chop up the parsnip and boil until soft
Drain and mix in the caster sugar and banana essence
Mash until fairly smooth
Cool down
Spread on your bread and make your sandwiches!

So those that have read my blog from when it began back in 2009 will see that my weight has yo-yo’d back and forth. It follows a typical pattern. I lose some, begin to feel a bit healthier, feel a bit happier, get complacent, start nibbling and before I know it I’m back to where I started.

I did really well back in 2012 and managed to lose over 80 lbs living and breathing a wartime rationing plan (with only just a few blips) and I’d got down to just around 230 lbs ….just getting close enough to within a few months of making it below 200 lbs.

When I think how close I was and how my weight was nearly at 300 lbs again at Christmas I could kick myself (but I’ve beaten myself up about it enough so I’m just leaving it in the past where it belongs).

For the past month or so I’ve begun to knuckle down again. I’m not living and breathing a wartime rationing diet 100% at the moment BUT I am using rationing as a guide to keeping everything in check (although I am using far less sugar than rationing allows). Breakfast is nearly always porridge with ground flax seed and soy milk. Lunch is a large raw salad with romaine lettuce, beetroot, raw peas, tomatoes, cucumber, kidney beans and supper is either a large vegetable based stew or stir fry and sometimes I deviate away if my daughter has prepared a nice healthy meal for when I get in from work.

I enjoy weekends as I have time to cook more new authentic wartime recipes and even bake something a little naughty using all that rationed sugar I am accumulating!

I’m yapping on aren’t I….

WELL I weighed in this morning and I am now below 20 stone!!!! Today I was 279 lbs or if you like 19 stone 13 lbs which is 17 lbs off since January and 66 lbs off from my heaviest weight ever of 345 lbs several years ago. This is giving me a HUGE push forward psychologically as recently I have been a little stressed over various things.

Not only am I pleased with the weight loss but I have broken the habit of raiding the cupboards/fridge overnight for 7 days now and am determined to continue.

BUT I DON’T WANT TO BECOME COMPLACENT… so I took this photo above in the mirror just now to remind myself just why I want to get below 200 lbs.

My belly …..the fat seems to sit all around my stomach and abdomen area and I am so embarrassed about it. So why am I showing it off on my blog? Because I know my own mind and this works for me, this reminds me to keep going…this reminds me to never give up

The doctor called me in…

b1I’m a blogger, I like to talk things through, I like to discuss, share, talk, read, grumble, scream and giggle. I’m not good at keeping things to myself but I have been doing for a week now, but that’s not me, I need to put this out there for my own sanity, for your knowledgeable feedback…

For those of you that read my blog, you’ll know that I ended up with a nasty double pneumonia around New Year and was hospitalized in the USA (was on holiday). I’ve never been ill like that before..

To skip forward, with some great treatment in hospital thingsb2 turned around quite quickly but after weeks of taking steroids, within days of stopping them my lungs began to get crackly again and I couldn’t lie down in bed. Doctor put me on a steroid inhaler and a regular inhaler with thoughts I am probably now asthmatic. She sent me back for a chest x-ray to make sure the pneumonia wasn’t returning. I felt fine apart from feeling exhausted..

With the x-ray done a few days later I began to get calls from the surgery, eventually we hooked up. My doctor had asked to see me on Monday (it was Friday) to discuss my x-ray.

Of course when you get a phone call like that your mind goes crazy.

Having a weekend to conjure up every possibility of WHY the doctor would want to see me so quickly (thanks Google, I love you and I hate you) I was kind of flat-lining (no emotions) by the time Monday came around. The best I could come up with was that maybe there was some scarring in my lungs…

DOC: “Your chest is clear, there is no pneumonia….”
ME: “Great!! I didn’t think it had returned but am relieved to hear that!”
DOC: “But… your HEART IS ENLARGED. I thought it would be nicer to talk to you face to face about it”
ME: “Oh….” (flat-line)
DOC: “Do you feel OK…?”
ME: “Yes fine… just tired”
DOC: “So we need to do another ECG on you when you have your spirometry (for Asthma) and we need to get you in to do an Echocardiogram to see what’s going on. Has anyone told you that you have an enlarged heart before…?”
ME: “No” (flat-line)

And that’s pretty much it. I should have asked tons of questions (when she asked me if I had any) but at that moment I smiled weirdly at her, looked happy like we were talking about vast quantities of chocolate truffles and flat-lined out of the surgery thinking…. WTF is an enlarged heart?

Later, after I’d woken up a bit, Google reassured me and frightened the sh*t out of me all on one page…

That’s the problem with not asking questions when the doctor asks you if you have any….you turn to Google and Google is rather clinical, practical, to-the-point and perhaps doesn’t consider the variables, the other possibilities…

So I’ve put things into perspective…

a) I feel OK, tired, a little breathless on exertion, sometimes exhausted at the end of the day but that could still be the knock on effect from the pneumonia. They say it can take months to feel 100%
b) No enlarged heart was seen on the x-ray in the hospital in America when I was admitted with pneumonia. This could mean that IF my heart is actually enlarged it most likely happened recently and probably due to the pneumonia, which is good because it’s been caught early and may well revert back!

b3I’ve been talking to people who’ve had pneumonia and developed an enlarged heart. Some made big lifestyle changes and reversed the enlargement, some people went further into heart failure.

MAYBE the x-ray was wrong? Maybe I was stood at an odd angle and things appeared not as they are?

MAYBE if I lose a bunch of weight over the next month while waiting for the echocardiogram and eat super healthy and sleep 10 hours every night everything will be back to normal by the time the test comes around?b4

MAYBE if it doesn’t I’ll be one of those people who lives to 95 with an enlarged heart, no probs! (and yes there are people who do that!)

I’m not feeling sorry for myself, if anything I am just a bit confused and determined to focus on doing everything I possibly can to reverse the situation. Just want the ECHO over and done with so I know what’s happening.(IF anything is happening that is!)

AND if everything is hunky-dory and the enlargement was temporary due to the pneumonia then actually let this be known as the universe sending me another HUGE WAKE-UP CALL and for that I will be enormously grateful.

Country House Cake – Recipe No. 147

This is the first recipe I’ve made out of my latest acquisition which is a fabulous wartime recipe book of tried and tested readers recipes printed by the Daily Telegraph during the war. Best thing was it just cost me a penny (plus £2.80 postage and packing)…

This came out amazingly well for an eggless cake and I added a sugar glaze to add a little extra decadence which was really nice and was so simple to do (a couple of dessert spoons of sugar dissolved in about 150 mls of boiling water and simmered for just a minute and drizzled over).

I used dairy free margarine and soy milk so this recipe is also suitable for vegans.

The whole cake cost about 50 pence to make so great value for money!

Country House Cake
12 oz plain flour
3 oz sugar
4 oz margarine
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon of mixed spice
6 oz dried mixed fruit
1/2 pint warmed milk

Method
Cream margarine and sugar together.
Add all dried ingredients making sure the flour is sieved and everything dry has been well mixed.
Stir in warm milk and beat well.
Place in a 7 inch deep tin.
Bake in a moderate 180 C for 1.5 to 2 hours.

Makes 12 slices.

Mince-in-the-Hole – Recipe No. 146

Another recipe from ‘Eating for Victory’. I LOVE this book because it literally is a made out of the scans of ACTUAL Ministry of Food leaflets bound together in a hardback book.

This recipe is for ‘Mince-in-the-Hole’ and was a way to use up bits of leftover meats which were minced up and formed into balls, roasted in the baking pan then the batter was added and baked until cooked.

Being a veggie I used Quorn mince but had problems forming it into balls that would stick together even with the addition of some sticky tomato chutney and a little bit of margarine. Nevertheless I was able to mound the mixture up sufficiently in the baking pan to make a fairly good attempt at it. It tasted very nice and I ate two portions with peas, carrots and gravy!

Wartime Mock Crab – Recipe No. 145

Lets get this straight right away. This doesn’t taste like crab in any shape or form BUT it was very tasty and so very simple to make and used up 1/2 a weekly egg ration per person (serves 4).

When I say it serves 4, it’s enough filling for 4 rounds of sandwiches with some cucumber, grated carrot, tomato or salad leaves…. but only just.

I served mine on a carrot and swede mash with some peas on the side. All my egg ration is used up for the week now as I had half of it.

Costs about 60p to make.

Wartime Mock Crab

1/2 oz of margarine
2 eggs or 2 reconstituted dried eggs
1 oz cheese
1 dessertspoon salad dressing
few drops of vinegar
salt and pepper as you like it

Method
Melt the margarine in saucepan, add the well beaten eggs.
Scramble until half set then add the rest of the ingredients.
Serve as a sandwich filling, on hot toast or over mashed potatoes.
