Wartime Eggless Pancake – Recipe No. 233 + Free recipe card

My wartime eggless pancakes came out really well, perfectly imperfect (I think that should be my motto!). At the end of the day they were super economical and quick to make and utterly delicious. I didn’t hold back on the golden syrup, I also sprinkled on some sugar and threw on some raspberries. Coupled with some piping hot loose leaf tea from my little “Brown Betty” and drunk from my “Beryl” tea cup, I felt a comfort…

Wartime Eggless Pancakes

  • 4 tablespoons of flour (see conversions tab for other countries)
  • teaspoon of sugar and a pinch of salt
  • milk to bind
  • fat to fry

Method

  1. Mix the flour with the salt and sugar and add the milk to make a nice smooth pourable thick batter
  2. Heat the fat until smoking hot in the pan then lower the heat a little
  3. Pour in 1/2 the mixture to make a medium sized pancake
  4. Cook until browned and then turn over and repeat
  5. Eat with jam, golden syrup, sugar or lemon juice (if being authentic)

Makes 2 pancakes

  1. I made the eggless pancakes and they were a great success! On another note, could you put out a complete meal plan for the month? As a vegan trying to lose weight I would really appreciate a guide from you,as you are doing so well! Thank you so much. Love following along with you and , yes,I’m on the wait list for your book! I think I signed up on the first day😊


    • Sounds like a great idea, i will work towards doing that, hopefully in the next week or so, have a few things I am working through but the menu I know would be super helpful for people as a starting point, xxxx C


  2. My mom was a teenager during WW2. That’s when she learned how to make pancakes. They were always eggless. I was raised on them and still make them without eggs. Never knew that some people put eggs in pancakes. Funny!
