Carolyn so lovely so hear from you. I’m so pleased you are in a much better place. You are so generous with your time and such a good soul. Look after yourself. It’s so very easy to become overwhelmed in the times we are going through. Self care is always last on the list when really it should be first. I think it is a women’s disease. Bubble and squeak is one of those childhood foods we had that was eaten out of necessity but now it’s nostalgic. Even although it’s just leftovers plus anything else with mash to bind it together it’s just great. I like mine traditional made with mash, fried onions and shredded cabbage and for speed of cooking I use a sandwich press rather than a frying pan as it cooks both sides at the same time.
