Oatmeal soup No 99

Here is a soup recipe that literally costs pennies to make and quite frankly is surprisingly delicious. It was easy to veganize too. I simply substituted the margarine for a non-dairy margarine (Earth Balance or Becel Vegan) and the milk for a non-dairy milk (Almond, Flax, Hemp)

This recipe makes 4 small bowls or two very large bowls, but guess what, I ate it all but instead of serving it with a hunk of bread I garnished it with some homemade croutons made from stale wholemeal/wholewheat bread..

The actual cost is less than a $1 or about 65p for 4 bowls..

Oatmeal Soup

  • 1 pint  (570 ml) water or vegetable stock
  • 3 tablespoons porridge oats/oatmeal
  • 2 medium finely chopped onions
  • 3 medium grated carrots
  • 1/2 pint (285 ml) of milk
  • 1 tablespoon of margarine
  • salt and pepper
  • herbs

Method

  1. Place margarine in large saucepan and heat up
  2. Add finely chopped onions and fry for 5 minutes on medium/high until translucent
  3. Pour in vegetable stock or plain water
  4. Sprinkle in the porridge oats and mix
  5. Add in salt and pepper and herbs
  6. Bring to boil and simmer for 20-30 minutes stirring frequently
  7. Add in grated carrots and milk and carry on simmering for another 15 minutes uncovered and stir frequently and add more seasoning as required

  1. This looks nice! I wanted to thank you for the Anzac bicky recipe. They are my favorite cookies ever. We made one small change — instead of golden syrup we used maple syrup. Otherwise, it’s the original recipe. And I can also tell you that honey as a substitute doesn’t work. It burns. Anyway, I look forward to seeing how your Christmas cake turns out after it’s baptism of sherry.

  3. Thanks all. The soup LOOKS a LOT BETTER than in the photo. Alas I only have a very bad camera on my iPod to take photos and now I have lost my graphics software because the computer I had with it on belonged with my last job.

    I’ve just now got me a refurbished Dell laptop PC for $195 and will be trying to find a very old version of Photoshop so I can continue.

    So in the photo it looks grey but infact it was a very nice colour and tasted really nice- honestly!!!

  4. i’m with you on this one, oat based soups are surprisingly delicious. I accidentally made one the other week and really enjoyed it. Accidentally? My oatmeal dumplings fell apart in the cooking water, so I added some veg, butter and salt. Make do and mend!


  5. This recipe is a lot like Skilly. Add potato and parsnip or turnip to it. Skilly was a soup they served to the people eating at the British restaurants during the war. The first time I heard of this it sounded disgusting, but I tried it and it instantly became my favorite…along with split pea. : )

  7. Finally made this soup today.
    In addition to the carrot and onion,I used diced turnip, diced potatoes, one cup less milk with a bit of flour mixed in.
    I also made the recipe X4.
    It thickened up beautifully.
    I used sage, nutmeg and thyme as the seasonings.
    It is thick, tasty and satisfying; all of us thought so and I will definitely be making this again 🙂


  8. Scottish Oatmeal Soup or Kail Brose as we call it on Bonnie Scotland – this is my Grannies recipe (you don’t have to use kale as any green leafy brasica will suffice).
    To serve about 4 or 6 depending on appetites.
    2 litres good stock (home made is best)
    50g oatmeal (lightly toasted)
    500g kale, coarse stems removed & shredded
    1 onion, finely chopped & fried
    Simmer together until the greens are cooked – that’s it !, simple.
    Serve with cream & soda bread or scones – but only if you are not on a diet !
